Vegan palak paneer

  1. Marinade tofu cubes in lemon juice
  2. Boil spinach garlic and ginger. Use lots of spinach because it cooks down. Don't use too much water. Maybe add water to half the depth of spinach.
  3. Heat olive oil in large, thick walled pot
  4. Add whole, seed spices: Cumin seeds. Fry until popping.
  5. Saute onions
  6. Add ground spices: Garam masala mix two
  7. Saute until translucent. Liquify spinach, ginger and garlic with blender wand. Add to onions and spices. Add tofu. Cook till desired consistency.
  8. Add salt to taste (lots)
