Vegan palak paneer

- Marinade tofu cubes in lemon juice
- Boil spinach garlic and ginger. Use lots of spinach because it cooks down. Don't use too much water. Maybe add water to half the depth of spinach.
- Heat olive oil in large, thick walled pot
- Add whole, seed spices: Cumin seeds. Fry until popping.
- Saute onions
- Add ground spices: Garam masala mix two
- Saute until translucent. Liquify spinach, ginger and garlic with blender wand. Add to onions and spices. Add tofu. Cook till desired consistency.
- Add salt to taste (lots)
